Equipment Needed for Growing Beet Microgreens

If you decide to buy the items individually, you will need the following:

Seed Soil – Beet microgreens do not require a lot of water to grow well. Therefore, you want soil that will hold some water without becoming soggy. Seed starting soil is the best soil to choose because it has an ultra-fine texture. Beets have oddly shaped seeds that require a level area to take root. Furthermore, their roots are extremely delicate, which is why soil is recommended rather than using coconut coir. Here is the soil that we recommend:

Growing Trays for Seeds and Soil – Beet microgreen trays should have drainage holes and be shallow. This setup allows you to water from the bottom, which allows water to reach the roots without causing mold or disease due to top watering. Try these trays:

Growing Beet Microgreens

Growing beet microgreens only takes a few easy steps. Our step-by-step guide will help you get a bountiful harvest.

No Soaking Necessary

Beet microgreens seeds have a thin hull and do not need to be presoaked.

Planting Beet Microgreens

Place your tray with holes inside a tray without holes. We recommend using 10 inch by 20 inch plastic trays; however, you can use other sizes as long as you place one with holes inside one without holes.

  • Use only growing soil – Fill your top tray approximately ¾ full, running the soil through your fingers to ensure there are no clumps. Make sure that you spread the soil evenly to the corners. Continue layering soil until it is right below the brim of your tray.
  • Level the soil – Use another tray to flatten the soil out. Don’t press too hard. You do not want to compact the soil, only flatten it out to ensure even seed distribution.
  • Moisten the soil – Use your misting bottle to moisten the soil. Mist the soil three times to ensure it is amply moist.
  • Spread the seeds – Your beet microgreen seeds should be evenly spread to ensure proper germination. Beet seeds should be spaced close together – approximately 10 seeds per square inch is the recommendation.
  • Mist seeds – Make sure that you adequately moisten the seeds using your sprayer.
  • Cover seeds – Once you have moistened your seeds, cover your seeds with another grow tray without holes.

Growing and Caring for Beet Microgreens

  • The growing process for beet microgreens begins with germination, which occurs in the dark. Once you have covered the beets with a tray, place a small weight on top of the tray. Don’t worry, the seeds will push the tray up as they grow.
  • Leave your seeds covered for 4 to 6 days. Beets require complete darkness for proper germination, which occurs in 3 to 5 days. The additional time allows seeds ample time to sprout.
  • On day 6, it is time to remove the cover tray and turn on the grow lights. When you first lift the cover tray, your sprouts may look squished or discolored, don’t worry. Your sprouts will recover once they are placed under the grow light.
  • Your beet microgreens need at least 12 hours of light, which is why a grow light is the best choice.
  • Water your beet microgreen from the bottom. The soil will absorb the water while preventing your microgreens from getting wet. Water daily or whenever the soil begins to dry out.

Harvesting Beet Microgreens

Your beet microgreens will be ready for harvest between 10 and 20 days after planting.

  •  You will want to harvest your beets right before the first set of true leaves grow in. If you wait too long, your microgreens will become tough.
  • Use a pair of sharp scissors or a sharp knife and cut them right above the surface of the soil. The bright red stems may stain, so wear a pair of gloves and old clothing when harvesting beet microgreens.
  • Place your microgreens in a cool water bath to rinse them. Then, lie them on a clean towel and place a fan in front of them to circulate the air and speed up the drying process.

Your harvest will depend on the germination rate of your seeds and how densely you planted your beet seeds. We recommend TrueLeafMarket.com for your seeds to help ensure a good harvest.

Storing Beet Microgreens

The best way to store your beet microgreens is in an airtight sealed bag in your refrigerator. When properly sealed, they will last about one week. You can also use lightweight, plastic containers to store your beet microgreens.
